These are 100 Grand cupcakes with salted caramel buttercream, from one of my favorite food blogs, The Novice Chef Blog. I've made these a few times, and every time they are a huge hit. I think the key with any cupcake is to do the icing with a piping bag. A knife just doesn't make them look pretty. Most have a 100 Grand piece in the middle and some have a Kit Kat. I made these for my neighbor/friend's birthday party.
For the above cupcakes, I used the same cake recipe as the 100 Grand, but made a peanut butter filling & peanut butter buttercream frosting. The ones topped with shaved coconut have a Mounds bar piece in the middle & are covered with dark chocolate ganache. I made them for a 'Fakesgiving' dinner with some friends.
